Man accumulates in body many different compounds previously accumulated in different parts of the environment. Among the many compounds that constantly contaminate the environment, special attention is drawn to polychlorinated biphenyls (PCBs). High resistance to degradation of these substances under the influence of the chemical, physical and biological factors causes that polychlorinated biphenyls, like many organochlorine pesticides, are permanent, easily spread in the environment and accumulating in subsequent links of trophic chain. Concentrations of PCBs in food are varied and depend largely on the fat content and the degree of contamination with these compounds. In larger amounts polychlorinated biphenyls are found in animal food, in smaller in vegetables and fruit. Considering the toxicity of these substances aim of this study was to determine the content of polychlorinated biphenyls in selected vegetables from the area of Warmia and Mazury. Each investigated samples of vegetables contained polychlorinated biphenyls, but the content was at a level not exceeding the maximum value. Additionally calculated the toxic equivalent coefficient TEQ for PCB 118 showed that the vegetables are safe for the consumer according to adopted toxicological evaluation.
